The Perfect Beans

Selecting the perfect coffee cherries is a critical first step in producing a high-quality cup of coffee. As a fruit, coffee cherries ripen at different rates on the same branch, which is why a labor-intensive but precise method like handpicking is often preferred for specialty coffee. Farmers and pickers look for cherries that have reached their peak ripeness, typically indicated by a vibrant, deep red or sometimes yellow color, depending on the variety. At this stage, the fruit is at its sweetest and contains the optimal balance of sugars and acids that will ultimately contribute to the coffee’s flavor, aroma, and body.

Farm to Cup

The journey of coffee from farm to cup is a meticulous process that begins with a coffee cherry and ends with a cup of coffee. It starts on a farm in Vietnam where farmers hand-pick ripe coffee cherries. Cherries are then processed to separate the beans from the fruit. After processing, the beans are milled, sorted, and bagged for export. The next critical stage is roasting, where the beans are heated to unlock their aroma and flavor transforming them from green to the familiar brown color. Finally, the roasted beans are ground, and packaged for delivery to our warehouse, then to your kitchen or work location.
